Because the type of magma that comes out of them are different and therefore causing the shape to change. Volcanoes that are flat have fast flowing lava which travels a longer distance before cooling, whereas a volcano that is like a mountain has slow flowing lava which travels shorter distances and therefore forming into the neck of volcano.
