In some species of coconuts, it might take 2 to 3 weeks to germinate normally. It can take a month or even more than that as well, but you have to wait patiently for it.

Can't add another answer to this, so I'll just quickly add this here: many coconuts will only germinate if they're half above ground. They've evolved to endure weeks or months at sea and then germinate once they've hit land, and there's usually no way for them to get completely buried. So if you're trying to germinate one and not having much luck, that might be why.
