Transpiration is the evaporation of water from the plant to the air.  It happens mainly in the leaves, when the holes, or stomata, are open to permit the exchange of oxygen and carbon dioxide.  Transpiration not only "dries" the leaf (through the evaporation) but it is the means of getting the water and nutrients from the roots up to the leaves to aid photosynthesis and to cool the leaf.
