Pepsin is a protease stomach enzyme, I. E., it is a digestive stomach enzyme that breaks down long chain protein and amino acids into their much smaller and more manageable units known as amino acids and polypeptides.  As the digestion process progresses further, these amino acids and polypeptides are cut up by the enzymes into even smaller and smaller 'stomach bite size' pieces into the smaller units becoming known as peptides and/or amino acids, as your digestive system prepares them for absorption/assimilation.
