Stuff like borax and table salt are made up of tiny particles called atoms. These atoms get together and form things called molecules. The molecules like to be next to each other and so when you dissolve them in water they get very close together and line up nice and straight. Then as the water dries up the lined up molecules form little groups called cells and some of the cells line up with other cells and form bigger groups called crystals. The more groups that line up the bigger the crystals become.
