Olive is the main crop of Italy, and there are many people who are in the profession of olive cultivation. The area under cultivation of olives is also immense. It starts from northern shores of Lake Garda, west to Liguria and down through Tuscany. It also extends to Umbria and Lazio and to the farthest point are the tips of Puglia and Sicily.

All the regions of Italy are known to produce the best olive that is available in the world, but in terms of the percentage output, Puglia and Calabria contribute about 50 per cent of the output of Italy. The olive that is grown in Puglia and Calabria is quite robust and dense and it gives a full taste. And for the conservation of the olive oil, the product for which olive is grown, terracotta vases from Sicily are the best.
