Why do we put down salt in the winter?

To lower the freezing temperature of water and to interfere with the water forming it's crystal ice structurs.

Oh cool. How does salt lower the temperature of the water?

The dissolution of NaCl in water is endothermic ( internal to the solution heat ) so the solution, water, has it's freezing temp. lowered. A bit more complex than this but this is the gist of it.
