Tap root is a specific type of root structure present in some plants. The root is large and goes deep into the ground which makes it different from Fibrous roots. Tap roots are beneficial in a number of ways.

They store food and water for the plant and therefore tap roots are present on vegetables which grow in dry climate. Their roots reach deep down therefore they have food and water.

Root vegetables are veggies like carrots, turnips, radishes, parsnips etc
