Its a Chemical change. And just because the outside of the fruit changes, does not make it a Physical. The Chemical reactions of the fruit ripping change the shape, color, taste, texture, and smell of the fruit. For instance, you have a green Banana. Obviously it is not rip. The chemical reaction has not yet occurred. When it does, it changes from green to yellow, bitter to sweet, and so one.

Not in all cases because there are not amenable to chemicals, fruits and fruit there can not live without chemicals
