Saliva is the fluid produced in the mouth of humans and animals as well. It is made up mostly of water but it also contains other substances like anti bacterial agents, enzymes and mucus.  There is a lot of variation in the normal daily range of Saliva production for a health human being according to different sources. The best estimate would be that a health human produces between 0.75 liters to 1.5 liters of saliva.
