You can, but you can't really use them. If they are ripe then you can dry them for tea. Rose hips are a fine source of vitamin C and they are whether they are green or red, but it would be bitter and not pleasant to the taste.
Don't give up on them turning red either. It's still early and usually rose hips need the cooling down of the late summer. It's the same as with trees turning brillant colors in the fall.
If you did anything at all, you did them a favor for next year when the amount of rose hips will increase, so either way, you didn't hurt a thing. Smile =) !!!
