Because heat contributes to accelerated and better protein (or enzyme) activity. Too cold or too hot inhibits (stops) it.
Mold only grows in a moist, very warm atmosphere. It cannot live in the cold. That's why there seems to be more mold in the southern states, and southeast coast than anywhere else in the US.
Mold prefer living in warmer and more moist conditions...☺...I ♥ MOLD!!!
