Optimum temperature for enzyme activity is 37 degrees Celsius (temperature of human body). Extreme low (around 0 degrees Celsius) and enzyme activity may not even happen at all. At extreme highs (45 degrees Celsius +) the enzymes are denatured and won't work at all.

The optimum pH for enzyme activity is 7 (neutral). Both sides, lower and higher, will gradually make enzyme activity worse as you go lower or higher around 7.
